This recipe is for a wonderful side dish that even your kids (or husband) will eat. The carrots end up being very sweet and the ginger adds a really nice spike to the flavors.

Will try it tonight
I saw this recipe in recipezaar.com last year but didn't try that out. Will try it tonight.
Good Recipe
It is pretty good. Glad that I had tried that out ...
Better Idea?
Does anyone tried this out in a different way? If so please share you experiences. I will also update mine.
Kumquats
I like this recipe and for a twist I use thinly sliced kumquats (dime sized orange-like fruit), more ginger (2 TBSP) and some thai fish sauce or soy sauce instead of the salt. I've also had success adding a little balsalmic vinegar but less ginger.
I've thought of trying to add a few apples at the very end becuase I tend to like ginger/orange sauce with apples but I haven't tried it yet. I may tonight, I have a few that need to be used.
Recipe
I am going to try this recipe tomorrow. I will up date you with what I thought it tasted like.

Holiday Meals
Hi, thank you for this receipe.
I used to make these for holiday meals and somewhere along the way I lost the "touch". This year I'm hosting our Thanksgiving meal and wanted to reintroduce this tasty dish. I read several that were "almost right" finding yours was an EUREKA moment, even to simmering the carrots in a skillet rather than the usual pot - easier to control the done'ness.
The only change I will make is to mix the glaze this evening to cut down on last minute kitchen activity.
